Start by preparing all the ingredients: cut the spring onions, onion and peppers into the desired size and set them aside. Clean the prawns and mussels under running water.
Heat a generous splash of olive oil in a large paella pan over medium-high heat.
Fry the chopped onion until soft and translucent. Then add the sliced capsicum and garlic and stir-fry until well mixed. And then sprinkle the paprika and the saffron threads on top and mix everything thoroughly.
Now add the paella rice and briefly fry with it so that the rice grains are well mixed with the rest of the ingredients and the flavours spread.
Pour the fish stock into the pan and bring to a gentle boil. Let it boil gently for about 10 minutes.
After 10 minutes, turn down the heat and add the prawns, mussels and peas to the pan. Cover the pan and simmer gently until the seafood is cooked and the mussels are open.
In the last 5 minutes, sprinkle the spring onion over the rice and let it simmer for a few more minutes.
Remove the paella from the heat and let it rest for a few minutes before serving.
Serve with lemon wedges if desired and sprinkle with chopped parsley for extra flavour and presentation.
