Have you ever made a fish so delicious that your guests thought you secretly hired a chef? Well, here's your chance! And the best part? This recipe is perfect for the true adventurers among us, as it can be cooked over an open fire..

Ingredients and supplies

    1. 2 cleaned trout
    2. 1 shallot, finely chopped
    3. 2 cloves of garlic, finely chopped
    4. Handful of fresh herbs (such as parsley, dill, and thyme)
    5. 1 lemon, sliced
    6. 200 ml white wine
    7. Salt and pepper to taste
    8. Kitchen twine
Steps for the stewed trout recipe
Step 1. Preparing the trout

Rinse the trout thoroughly under cold water and pat them dry with paper towels. Sprinkle the inside with salt and pepper. We want them to not only look good but taste great too!

Step 2. Time to stuff!

Fill each trout with some of the finely chopped shallot, garlic, fresh herbs, and a few slices of lemon. It’s a bit like a mini-meditation, but with fish.

Step 3. Tying up

Use kitchen twine to tie the trout closed so the filling stays in place while stewing. Think of it like tying shoelaces, but without the shoes.

Step 4. Stewing

Heat a bit of olive oil in a large cast iron frying pan over medium heat. Add the trout and cook them for 2-3 minutes on each side until they are lightly browned. This is when your kitchen starts to smell like a five-star restaurant.

Step 5. Adding the white wine

Add the white wine to the pan and bring it to a boil. Reduce the heat and let the trout simmer for about 10 minutes, or until the fish is cooked through. We don’t want undercooked fish on the menu!

Step 6. Serving

Remove the trout from the pan and place them on a serving platter. Drizzle a bit of the cooking liquid over the fish for extra flavor. Voilà, your masterpiece is ready!

Tips for the perfect trout

  1. Use fresh ingredients: the flavour of fresh herbs and lemon really makes a difference. Plus, it gives you an excuse to finally use those herb plants.
  2. Stewing liquids: white wine is a great choice, but you can also experiment with other liquids like broth or beer.
  3. Open fire: this recipe can also be excellently prepared over an open fire, adding an extra smoky flavour to the trout. Perfect for campers.

Enjoy your trout

There’s nothing quite like preparing a delicious fish dish yourself. Whether you're in the kitchen at home or outside by a campfire, this smoked trout recipe offers a flavourful and impressive meal. So, put on your apron, uncork that bottle of wine, and get cooking. Bon appétit and have fun in the kitchen!
